Preheat oven at 130 celcius

Choose your ingredients eg seed mix, pumpkin seeds, dried fruit eg cranberries, figs, crushed walnuts, – all available in most supermarkets and heath stores.

Get a large bowl and add 2 tablespoons veg oil (I used sunflower oil as find olive oil leaves too strong a taste)
2-3 large squeezes of maple syrup( that stuff is expensive and I don’t want it too sweet)
3 large squeezes of honey
stir together

Add 2-3 scoops porridge oats
Add your seeds and nuts but leave out any dried fruit for now as it would burn ( you will need to chop up the dried fruit of its whole eg figs)
My secret ingredient? 3 squares of dark cooking chocolate chopped up!

Combine the mix together then spread it out on a large baking tray or two trays if smaller

Bake for 15 mins (10 mins in a quick oven)

Take out and gently smush apart the mix adding your dried fruit now

Pat it down on the tray and pop back into oven for 15 mins checking after 10 as you don’t want it to burn. If in doubt turn oven off after 10 mins and let the heat finish it off for you

Take it out and allow it to cool
Then smush it up again so you don’t have large slabs or chunks

Pop in into a kilner or airtight jar /container and keep for one month in a cool cupboard or fridge

I serve it on top of a mix of berries and natural yoghurt adding just a spoonful or two of granola – yum!
